Following a successful collaboration with local brewers Artefact on a trio of Cathedral-inspired beers, St Edmundsbury Cathedral have partnered with another Suffolk-based company to produce three Cathedral-inspired gins.
Bacton-based gin, Heart of Suffolk Distillery, who have been operating since 2018, are passionate about local products and collaborating with local organisations. In partnership with the Cathedral, they worked closely to create an end product which represents both brands. The Distillery also has The Secret Distillery gin bar, a modern ‘speakeasy venue’ in the centre of Bury St Edmunds in Short Brackland.
The three gins they have made are:
Abbey Gin is a London Dry Gin which reflects the classic surroundings of the Cathedral with orange notes and a signature gin profile.
Edmund Rose is gin distilled with rose petals to create floral notes on the palate which reflect the Edmund Rose, a very special flower planted in 2005 in commemoration of the completion of St Edmundsbury Cathedral's new Millennium Tower and the visit of HRH, Charles, Prince of Wales and Camilla, Duchess of Cornwall.
Pilgrims’ Garden is a London Dry Gin distilled using botanicals, including lemon balm and chamomile which would have been grown by the monks over 1,000 years ago.
The gins will be available in three sizes, a 37.5cl bottle, a smaller 20cl bottle and 5cl minis at the St Edmundsbury Cathedral Shop. These minis are also available in a tinned set of three and are perfect for sampling all three flavours before buying a larger bottle.

Jane Harrison, Manager of St Edmundsbury Cathedral Shop, says, “We are very pleased to be selling gin produced by the Heart of Suffolk Distillery in the Cathedral Shop. To be able to use the same plants as those found in the Pilgrims Herb
Garden is a nice link back to the Cathedral and it has been great to work with another local initiative to produce something unique to us.”
Ryan Luke, from Heart of Suffolk Distillery says, “We were thrilled to be approached by the Cathedral, having been recommended by various groups as a company who take pride in producing premium, artisan spirits and who thrive on collaboration. This process enabled us to experiment with new botanicals to create three gins which we believe encapsulate St Edmundsbury Cathedral perfectly.”
Prices for gins are:
37.5cl bottle: £28.00 20cl bottle: £16.00 5cl mini: £6.00
Gift set of three minis: £20.00
